I need to explain the variety of support a teaching assistant may be expected to give in the classroom whilst supporting planning and evaluating learning activities. If anyone can help I would be very grateful.

My take on this is that you are there to assist the primary teacher, and take guidance and instruction from them. Most primary teachers won’t give up "responsibility" for a sub or assistant to actually be in control of a particular study, but they may have responsibility over certain functions, such as grading papers, or preparing for the next class by having notes ready for the instructor, or by copying required material.
